PITA OR JABUKE (APPLE PITA) | |
We were given this recipe by some friends in Zagreb, but we have to go to Karlovac to explain who our Zabrepcani friends are. Bubba Capan's niece Kaja Paukovic Stanisic, who lives in Karlovac, has two daughters: Nada and Zdenka. Zdenka has a daughter Zeljko and a son Drazan. Drazan's wife is named Vesna. Vesna's brother is named Zeljko, who is a policeman in Zabreb. Zeljko's wife Darinka, who happens to be half Slovenian, gave this recipe to JoAnn after I helped Zeljko install a gas stove in their apartment. DOUGH: 700 grams flour 300 grams butter 13 grams baking powder 2 to 3 tbsp. sour cream 240 grams sugar 2 whole eggs Mix all ingredients, except flour. Mix until creamy. Add flour little by little. Divide dough in two and place in refrigerator for 20 minutes. APPLE FILLING: 1 1/2 kilo of apples, peeled and grated 10 grams cinnamon Sugar to taste Chopped walnuts, optional Grease and flour 9 x 13 inch pan. Roll out dough using lots of flour. Bake at 300 degrees for 40 minutes, then 375 degrees for 15 minutes. Cool and sprinkle with powdered sugar. |
