BATTER FRIED CHICKEN 
Soak 2 pounds boneless chicken in 1 cup light cream for 45 minutes to 1 hour. Mix together 2 cups flour and 2 teaspoons each of salt and pepper. Dip chicken from cream to flour to cream to flour then fry in skillet with approximately 2/3 cup heated oil (vegetable or peanut) approximately 10 minutes each side until golden brown.
