WHIPPED ACORN SQUASH 
5 lbs. acorn squash
1 c. honey
1 tsp. ginger
1/2 tsp. nutmeg
3 tbsp. butter
1/8 tsp. cinnamon

Preheat oven to 350 degrees. Bake squash about 1 1/4 hours. Spoon squash out of shell and put in mixing bowl. Add all ingredients and mix on high speed of electric mixer until smooth. Place in 3-quart baking dish. Dot with butter. Bake in 350 degree oven 20 minutes. Makes 8 servings.
