SHRIMP OR CHICKEN LO MEIN 
1/2 lb. whole wheat or reg. spaghetti, cooked and well rinsed
2 tbsp. oil
6 scallions, bias-sliced
1 clove garlic, minced
1/2 tsp. ginger (if you have it)
1 lb. shrimp or chicken breast, sliced thin
1 c. sliced mushrooms
1 sm. head bok choy or napa cabbage, sliced

SAUCE:

Combine: 1 tbsp. soy 1/2 tsp. sugar

1. Cook spaghetti; drain. Rinse well with cold water.

2. In wok, saute scallions, ginger, garlic for 1 or 2 minutes.

3. Add bok choy. Saute 2 or 3 minutes.

4. Add mushrooms. Remove all of the above and set aside.

5. Saute shrimp or chicken until done (3 minutes).

6. Add vegetables and spaghetti. Heat through and add sauce ingredients that have already been combined.

7. Heat through and serve.
