PEPPARKAKOR 
1/2 c. brown sugar
1/2 c. butter
1 egg
3 tbsp. fresh orange juice
Grated rind of 1 orange
1/4 tsp. cardamom seed
1/2 c. molasses
1 tsp. baking soda
1/2 c. warm coffee
1/2 tsp. cloves
1/2 tsp. ginger
1/2 tsp. cinnamon
4 c. flour

Cream butter and sugar well. Add egg and spices. Mix well, then add orange juice, rind, soda, molasses and coffee. Add flour and mix thoroughly. Best if left in refrigerator overnight. Roll out thin on floured board and cut in desired shapes. Bake in 375 degree oven for 12 to 15 minutes.
