LEMON TARTS 
7 med. uncooked tart shells (I use Bama)
1 c. sugar
2 tbsp. flour
2 tbsp. butter
2 eggs
1 lemon rind, grated & juice
Dash of salt

Combine all ingredients at once and beat until well mixed. Pour into pie shells and bake for 45 minutes at 300 degrees.
