ZUCCHINI MUFFINS 
2 c. zucchini, grated
3 eggs
1 tsp. vanilla
1 c. oil
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tbsp. cinnamon
1/2 c. nuts, chopped
3 c. flour

Stir by hand all ingredients except flour. Batter will be soupy. Add flour a little at a time and continue to mix by hand. Pour into muffin pans. Bake at 350 degrees for 20 to 25 minutes.
