RICOTTA COOKIES 
1 stick butter, softened
2 c. sugar
4 lg. eggs
1 lb. ricotta cheese
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract
4 1/2 c. flour

Cream together butter and sugar. Add eggs, vanilla and ricotta. Sift together flour, baking powder and baking soda. Then add to cream mixture. Drop by teaspoons onto greased cookie sheet. Bake at 375 degrees until lightly brown, about 12 minutes.

Frost with light glaze made of confectioners' sugar and water.
