BEAN CHALUPA 
1 lb. pinto beans
3 lb. pork roast
7 c. water
1/2 c. chopped onion
2 cloves minced garlic
1 tbsp. salt
2 tbsp. chili powder
1 tbsp. cumin
1 tsp. oregano
1 (4 oz.) can chopped green chilies

Mix all together in heavy pan and cook for 5 hours. Break up roast, cook, uncovered 1/2 hour. Serve over corn chips and top with cheese, lettuce, tomato, avocado and hot sauce.
