FRIED OYSTERS 
15 1/2 oz. oysters
1 c. fine bread crumbs, cracker crumbs, or corn meal
1/2 tsp. salt, pepper
2 eggs
1 tbsp. water

Drain oysters and dry between towels. Dip in seasoned crumbs, eggs, diluted with water, and then in crumbs again. Fry in deep fat, 385 degrees, until golden brown. Drain on soft paper and serve with tartar sauce.
