BAKED SHRIMP WITH FETA CHEESE 
2 med. onions, thinly sliced
1/2 c. olive oil
2 lbs. tomatoes, peeled and coarsely chopped
1/4 tsp. freshly ground pepper
2 cloves garlic
2 lbs. lg. shrimp, shelled and deveined
1/2 lb. Feta cheese
Parsley

Saute onions in olive oil until tender. Add tomatoes, parsley, pepper, and garlic. Cover and simmer for an hour. Put sauce and shrimp in large baking dish. Crumble Feta cheese over shrimp and bake, uncovered, in a 400 degree oven for 10-15 minutes. Garnish with parsley. (Side dish of angel hair pasta is good!)
