DATE PUDDING 
24 graham crackers
3/4 c. sugar
3 egg yolks and whites
1/4 c. brown sugar
1 tsp. vanilla
1 1/2 c. finely chopped dates
1/4 lb. butter
1/4 tsp. salt
1 c. white sugar
3 c. milk
1/3 c. flour

Heat 3 cups milk almost to a boil. Mix brown and white sugar and flour and add to milk. Cook until thick.

Beat egg yolks and add a little of the cooked mixture then add back into the cooked mixture stirring and cook about one minute.

Add vanilla and dates then pour into crust made of 24 graham crackers crushed, 3/4 cup sugar, 1/4 pound butter and salt mixed together. Press all but one cup into a 9x13 pan.

Beat egg whites until stiff and spread over pudding. Sprinkle rest of graham topping crumbs over top. Bake at 350 degrees for 25 minutes.
