CHICKEN WINGS PIQUANT 
24 wing pieces (cut apart & tips discarded)
1 c. Basil Fennel Dressing
1 tsp. oregano
3 tbsp. fresh grated Parmesan or Romano cheese
Salt & pepper to taste

Marinate the wing pieces in 1 cup of Fennel Dressing for 1/2 hour. Drain and place on oiled baking sheet. Sprinkle with the oregano, cheese, salt and pepper. Bake in a 375 degree oven for 35-45 minutes, or until wings are lightly browned and tender. Can be served hot or cold.

Note: Use more cheese than recipe calls for.

BASIL FENNEL DRESSING:

1/2 c. olive oil
1/2 c. peanut oil
1/2 c. red wine vinegar
1/2 c. white vinegar
1 tsp. sugar (or more to taste)
1 tbsp. dry mustard
1 tsp. fennel, ground
2 tbsp. lemon juice
1/8 c. dried parsley
Salt & pepper to taste

Blend the oils and the vinegars. Add sugar, mustard and fennel. Add lemon juice, parsley, salt and pepper. Use as marinade for chicken wings piquante or as dressing for salads, etc. Makes 2 cups. Keeps well in refrigerator.
