WINE BUTTER 
1 c. red wine
1 shallot minced
1/4 tsp. salt
1/4 tsp. fresh pepper
A few drops of lemon juice
1 tsp. minced parsley
1/4 c. creamed butter
A pinch of sugar

Simmer wine, shallot, salt, pepper, sugar together until wine is reduce about 1/3 the original amount. Remove the mixture from the heat and chill. Blend into the creamed butter.
