DANNY'S CHOCOLATE COVERED CHERRY
COOKIES
 
1 1/2 c. flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/2 c. butter
1 egg
1 (6 oz.) pkg. semi-sweet chocolate pieces
1/2 c. unsweetened cocoa
1/4 tsp. salt
1 (10 oz.) jar maraschino cherries
1 c. sugar
1 1/2 tsp. vanilla
1/2 c. sweetened condensed milk

Combine flour, cocoa powder, salt, baking powder, baking soda, and set to the side. Drain cherries saving juice, setting it to the side. In large mixer bowl beat butter with electric mixer on medium speed for 30 seconds. Add sugar and beat until fluffy. Add egg and vanilla and beat well. Gradually add dry ingredients and beat until combined. Shape dough into 1 inch balls. Place about 2 inches apart on ungreased cookie sheet. Press down center of each ball with your thumb. Place a drained cherry in the center of each cookie.

For frosting - in a small saucepan combine chocolate pieces, sweetened condensed milk. Cook and stir over low heat until chocolate is melted. Stir in 4 teaspoons of reserved cherry juice. Spoon 1 teaspoon of frosting over each cherry, spreading to cover cherry. (Frosting may be thinned with more cherry juice). Bake in a 350 degree oven for about 10 minutes or until edges are firm. Remove and cool completely on wire racks. Makes about 48 cookies.
