ORIENTAL BEEF 
1 lb. steak or roast, cut in cubes (or stew meat)
2 tbsp. oil
2 tbsp. soy sauce
1 (8 oz.) can pineapple chunks
1 green pepper, cut in strips
1/2 c. apricot or peach preserves
1 tbsp. vinegar
1 tbsp. cornstarch

Brown meat in oil; drain. Drain pineapple reserving juice. Add water to juice to measure 1 cup; pour over meat, cover, simmer for 20 minutes, stirring occasionally. Add green pepper and pineapple. Cover, continue to simmer 10 minutes. Stir in combined remaining ingredients. Cook until thickened. Serve over rice.
