COMPANY SAUSAGE CASSEROLE 
1 1/2 lb. lean sausage
1 med. onion, chopped
1 c. green pepper, chopped
1 c. celery, chopped
1 c. uncooked rice
1 can chicken gumbo soup
1 can cream of mushroom soup
8 oz. can sliced mushrooms
2 c. water & juice from canned mushrooms
1 1/2 c. shredded sharp Cheddar cheese
1/2 c. slivered almonds, optional

Brown sausage, onion, celery and green pepper in a skillet. Drain off excess fat. Add remaining ingredients. Spoon into 2 quart casserole. Bake covered at 350 degrees for 1 1/2 hours.
