DOUBLE QUICK DINNER ROLLS 
1 pkg. dry yeast
1 c. warm water
2 tbsp. sugar
2 tbsp. soft shortening
2 1/4 c. flour
1 tsp. salt
1 egg

In mixing bowl, dissolve yeast in water. Measure flour; stir sugar, half of flour, and salt into yeast. Beat with spoon until smooth. Add egg and shortening. Beat in rest of flour until smooth. Scrape down sides and cover with cloth. Let rise until double about 30 minutes.

Grease 12 large muffin cups. Stir down raised dough. Spoon into muffin cups, filling them half full. Again, let rise until dough reaches top of cups, 20-30 minutes. Heat oven to 400 degrees. Bake 15-20 minutes. Makes 12 rolls.

Also may sprinkle 1/4 teaspoon poppy or sesame seeds over each roll after filling muffin cups.
