TUNA NOODLE FLORENTINE 
May be prepared a day ahead:

1 (10 oz.) pkg. egg noodles, cooked
2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
2 (6 1/2 oz.) cans water packed white tuna, drained
2 (2 oz.) jars diced pimientos, drained
2 (10 1/2 oz.) cans of mushroom soup
1 tsp. minced onion
2 c. grated cheese (sharp)

Combine noodles, spinach, and remaining ingredients, reserving some cheese to sprinkle on top. Cook in covered casserole in 350 degree oven until cheese bubbles (about 30 minutes). Makes a pretty and tasty luncheon. Serve with fruit salad and cinnamon rolls. Serves 8.
