1 (6 oz.) pkg. buttermilk biscuit mix
1 (2 oz.) pkg. instant potato flakes
1 c. granulated sugar
1 stick butter, melted
1 egg, beaten
1 tsp. vanilla (or 1/2 tsp. vanilla and 1/2 tsp. imitation coconut flavor)

Mix all ingredients together. Form into small balls and place on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Leave on cookie sheet until cool. Makes about 5 dozen cookies.
