CINNAMON APPLE PIE 
50 Nilla cinnamon wafers, finely rolled (about 1 3/4 c. crumbs)
3/4 c. Blue Bonnet butter, melted
6 tbsp. granulated sugar
4 c. sliced baking apples
2 tbsp. lemon juice
1/2 c. chopped walnuts
1/4 c. firmly packed light brown sugar

Mix 1 1/4 cups wafer crumbs, 6 tablespoons melted butter and 1/4 cup granulated sugar; press on bottom and side of 9-inch pie plate. Set aside. In skillet over medium heat, cook apples in 2 tablespoons butter until tender. Stir in remaining granulated sugar and lemon juice; cook 2 to 3 minutes more, stirring occasionally. Spoon apple mixture in prepared crust; set aside.

Mix remaining wafer crumbs, butter, walnuts and brown sugar; sprinkle evenly over apple mixture. Bake at 350 degrees for 25 to 30 minutes or until golden brown. Cool on wire rack. Serve chilled or at room temperature.
