POTATO - SPINACH PUFF 
2 1/2 c. hot mashed potatoes
1 1/2 c. raw chopped spinach
1 tsp. salt
4 tbsp. butter, melted
Dash of pepper
Dash of paprika
4 eggs, separated

Combine all ingredients except eggs. Blend in 4 egg yolks. Beat egg whites until stiff and fold into mixture. Pile lightly into greased 1 1/2 quart casserole pan. Bake at 375 degrees until puffed and golden, about 40 minutes.
