APPLE RICE PUDDING 
1 qt. milk
1/4 c. sugar
1 tbsp. butter
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 tsp. vanilla
1/3 c. regular rice
1 c. sliced apples
1/4 c. raisins (optional)

Mix all ingredients except rice. Add rice. Pour into greased 1 1/2 quart casserole. Bake uncovered 2 1/4 to 2 1/2 hours at 325 degrees. Stir often until it sets. Halfway through baking time add 1 cup sliced apples and 1/2 cup raisins. Stir gently. Top with dash of cinnamon.
