BEST BLUEBERRY MUFFINS 
1/2 c. rolled oats
1/2 c. orange juice
1 1/2 c. flour
1/2 c. sugar
1 1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. cooking oil
1 egg, slightly beaten
1 c. blueberries
2 tbsp. sugar
1/4 tsp. cinnamon

Heat oven to 400 degrees. Prepare muffin tin or line with cups. Combine orange juice, oats, flour, 1/2 cup sugar, baking powder, salt, soda, cooking oil and egg. Stir in berries. Fill cups 2/3 full. Blend 2 tablespoons sugar and cinnamon and sprinkle over batter. Bake 18-22 minutes.
