FAVORITE APPLE PIE 
3 tbsp. plus 1 tsp. unsifted all-purpose flour
3/4 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1/4 stick unsalted butter
3 lbs. apples for pie (Cortland, Rome, Jonathan)
1 tbsp. milk
Frozen or homemade pie crusts

Put unbaked crust in oven. Prick bottom and sides first. Place another pie plate inside it and weigh it down with pie weights. Bake at 425 degrees for 5-7 minutes to set bottom crust. Remove immediately. Place 1 teaspoon of flour in bottom of crust.

Mix dry ingredients. Add to peeled and not-too-thinly sliced apples. Place top crust on and slice air vents in it. Brush with milk and sprinkle with a little sugar. Bake 425 degrees for 1 hour. The Best!

Made a great pie. I used 3 lbs of fresh cortland apples that my father in law picked. I guess my only note is that I purchased a 9 inch frozen deep dish pie crust, and I had enough filling for two of them. I ended up using a crumb topping for the two pies and using my top crust as a bottom crust for the second pie.
