2 c. flour 1/2 c. sugar 1 tbsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/4 c. butter 1 c. plain or vanilla yogurt 1/4 c. milk 1 egg 1/2 tsp. vanilla About 1/3 to 1/2 c. favorite jam or preserves Confectioners' sugar Heat oven to 425 degrees. Butter muffin cups inside and on top. In bowl blend dry ingredients. Melt butter. Off heat, stir in yogurt and milk, when smooth, beat in egg and vanilla. Add butter mixture to dry ingredients and stir well. Spoon half the batter into muffin cups. Place about a teaspoonful of jam over batter in each cup and top with remaining batter. Bake 15 to 20 minutes until golden. Let stand 5 minutes before removing muffins from tin. Sift a little confectioners' sugar over muffins just before serving. Makes 1 dozen regular size muffins. |
