VEGETABLE BEEF SOUP 
3 lb. beef shank
1 (1 pt.) can tomato juice
1/3 c. chopped onion
4 tsp. salt
1/4 tsp. chili powder
2 bay leaves
1 (1 lb.) canned tomatoes
1 c. diced celery
1 can whole corn
1 c. carrots, sliced
1 c. potatoes, diced
1 c. rutabaga, diced

Put meat, tomato juice, onion, seasonings and 6 cups of water in pot and simmer 2 hours. Remove meat from broth and cut into cubes. Put meat and rest of vegetables in pot and simmer 1 more hour.
