JACK CHEESE OVEN OMELET 
8 strips bacon, diced
4 green onions and tops, thinly sliced
8 eggs, slightly beaten
1 c. milk
1/2 tsp. seasoned salt
8 oz. shredded Monterey Jack cheese

Fry bacon until crisp; drain on paper towel. Cook onions in 1 tablespoon drippings until golden. Combine eggs, milk and seasoned salt; stir in bacon, onions and about 3/4 of the cheese.

Pour into a buttered 2-quart shallow baking dish. Bake at 350 degrees for 35 minutes. Top with remaining cheese; bake 5 minutes. Makes 6 servings.
