CREOLE CHICKEN AND RICE 
1/2 onion, diced
1/2 green pepper, diced
1/2 c. oil
2 c. rice
2 tbsp. salt
2 tbsp. tomato paste
1/2 chicken marinated and cut in pieces with lemon and garlic
1 tbsp. ground oregano

Pour 1/2 cup oil in hot pot (Dutch oven). Add onions, green peppers, tomato paste and oregano. Mix together until slightly cooked. Throw in pieces of chicken; let cook for 20 minutes in medium heat, covered. Then add rice in pot; add 4 cups water. Stir everything, taste brew for flavor to your liking. Cover pot; cook on low heat for 35 minutes.
