SHRIMP BROCHETTES | |
1 1/2 lbs. shrimp (med.), fresh 3 1/2 tbsp. olive oil 3 1/2 tbsp. vegetable oil 2/3 c. fine, dry unflavored bread crumbs 1/2 tsp. very fine chopped garlic 2 tsp. finely chopped parsley 3/4 tsp. salt Freshly ground pepper, 5 or 6 twists of the mill Lemon wedges Preheat broiler to its medium setting (for 15 minutes). Shell and devein shrimp. Wash in cold water and pat dry with paper towels. Put shrimp in large mixing bowl. Add the two oils and bread crumbs to lightly coat. When coated, add chopped garlic, parsley, salt and pepper and mix well. Steep shrimps in marinade for at least 20 minutes at room temperature. Skewer shrimp lengthwise on flat, double edged skewers, 5 or more shrimp per skewer. Broil shrimp no more than 3 minutes on one side and 2 minutes on the other. Each side is done as soon as a crisp, golden crust forms. |
