OATMEAL COOKIES 
3 eggs, well beaten
1 c. raisins
1 tsp. vanilla extract
1 c. butter
1 c. brown sugar
1 c. white sugar
2 1/2 c. flour
1 tsp. salt
1 tsp. ground cinnamon
2 tsp. baking soda
2 c. oatmeal, can substitute 1/2 c. wheat germ for more healthful cookies
3/4 c. chopped pecans

Soak eggs, raisins, and vanilla in a bowl covered with plastic wrap for 1 hour. Cream the butter, white sugar, and brown sugar. Add egg and raisin mixture plus the remaining ingredients. Bake at 350 degrees for 10-12 minutes. Delicious. The secret is soaking the raisins.
