GREEK MUSHROOMS 
2 lbs. med. mushrooms
1 c. water
1 c. red wine vinegar
1 c. olive oil
2 bay leaves
1/4 tsp. crushed thyme
1/2 tsp. onion powder
2 cloves garlic
2 tsp. salt
12 pepper corns

Clean and trim mushrooms. Bring all ingredients (except mushrooms) to a boil and simmer 5 minutes. Add mushrooms and simmer 10 minutes. Cool. May be served room temperature or reheated. Best if made a day ahead!
