TOFU BANANA BREAD 
3/4 c. tofu
1 c. sugar
3/4 c. walnuts, chopped
1/4 c. oil
1 tsp. vanilla
1 c. ripe bananas, mashed
2 c. unbleached, white flour
1/4 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder

Preheat oven to 350 degrees. Beat tofu until smooth and creamy. Pour into mixing bowl and beat in sugar, vanilla, oil, and bananas. In another bowl mix flour, baking powder, baking soda and salt. Beat everything together, then fold in walnuts. Pour into greased loaf pan and bake approximately 1 hour.
