CREME BRULEE 
3 slightly beaten eggs
2 c. light cream
1/4 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/4 c. packed brown sugar

In heavy saucepan, combine eggs, cream, sugar and salt. Cook and stir over low heat, until mixture coats a metal spoon. Cook 2 minutes more. Stir in vanilla. Pour into 1-quart shallow baking dish. Chill. Sift brown sugar over top. Set in shallow pan of ice cubes and water. Place on middle rack and broil at 400 degrees 4 to 5 minutes or until a bubbly crust forms. Serve warm or chilled.
