GRILLED EGGPLANT WITH MINTED
YOGURT
 
2 eggplant, cut into 1/2-inch pieces
1/2 c. olive oil
1 c. plain yogurt
1/2 c. mint leaves
Juice of 1 lemon
1/2 cucumber, cut into pieces
2 cloves garlic
Salt and pepper to taste

Brush the eggplant with olive oil and cook over a grill. Place the rest of the ingredients in a food processor and blend until well mixed. Adjust seasoning.
