GROUNDNUT STEW 
1 fryer chicken, cut up
1 onion, sliced or chopped
1 tsp. salt
1/2 c. unsalted peanuts, finely ground or 1/2 c. peanut butter
Cooking oil
2 c. water
Pepper to taste
Flour for breading

Roll cut-up chicken in flour seasoned with salt and pepper. Fry in hot oil in heavy stewing pan until browned. Drain chicken and set aside. In same oil, saute onion until golden brown. Add water and bring to boil. Return chicken pieces to pan and simmer 20 minutes. Add peanuts or peanut butter (and a bit more salt, if needed). Continue cooking until chicken is tender.

Place small side dishes of chopped peanuts, hot ground pepper and chopped fresh tomatoes on serving table. Serve over rice, topping with additional chopped peanuts, hot pepper and tomatoes as desired. Serves 4-6.
