SCALLOPED SPINACH 
4 (#2) cans spinach
4 tbsp. butter
4 tbsp. chopped onion
4 tbsp. flour
3 c. milk
Salt and pepper to taste
1 lb. cubed Velveeta cheese
1 stick butter
1 c. cracker meal

Drain spinach well. Melt butter. Add onion and saute. Add flour, milk, salt, and pepper. When thick, add cheese. When the cheese is melted add the spinach. Put everything in a baking dish. Melt 1 stick butter and cracker meal. Stir until well coated. Pour over top of casserole. Bake 1/2 hour at 350 degrees.
