LENTIL VEGETABLE SOUP | |
2 c. lentils, washed 8 c. water or vegetable stock 1 onion, chopped 2 cloves garlic, minced 2 lg. celery ribs, chopped 2 lg. carrots, chopped 1 zucchini, chopped 1 tbsp. parsley 2 1/2 tsp. salt 1 slice fresh ginger Combine the above ingredients in a large soup pot with a cover and bring to a boil. Reduce heat and simmer, covered, for 1 1/2 to 2 hours. Before serving, top with sliced green onions. |
