CHICKEN AND BROCCOLI CASSEROLE 
4 boneless chicken breast
1/4 c. oil
1/2 c. chopped onion
1 lg. bag frozen broccoli, cut up
1 can cream of mushroom soup
1/2 c. Swiss cheese, cubed
1/2 c. Monterey cheese, cubed
1/2 c. cheddar cheese, cubed
1/2 c. seasoned bread cubes
1/2 c. well done bacon pieces
Salt, pepper, garlic powder to taste

Cut the chicken in serving pieces, pound down between wax paper, season with salt, pepper, garlic. Saute onion in oil, add chicken and brown on both sides. While chicken is browning, prepare the broccoli according to directions.

Line a 10 x 13 inch casserole with the broccoli. Lay chicken on top. Prepare mushroom soup. Do not boil, when hot at cheese and stir until melted. Pour over the chicken and broccoli. Sprinkle with bread crumbs and bacon. Cover tightly with foil. Bake for 30 minutes at 350 degrees. Serve with buttered noodles or garlic bread.
