CORNED BEEF & CABBAGE SKILLET 
1/2 c. oil
1 lb. potatoes
Salt & pepper to taste
2 tbsp. butter
1 sm. chopped onion
2 qts. thin sliced cabbage
1/2 tsp. salt
1 (12 oz.) can corned beef

Cube potatoes and cook in hot oil, turning frequently until lightly browned. Salt and pepper potatoes, scrape into bowl and set aside. Add butter to skillet, stir in onions, cabbage and 1/2 teaspoon salt. Cover and cook until cabbage is almost tender, stirring occasionally. Lightly toss potatoes and beef into cabbage mixture. Cover and simmer to serving temperature.
