KANSAS FRIED STEAKS 
2 eggs
2 tbsp. milk or water
4 cube steaks, scored
Flour
1/2 tsp. salt
Fresh ground pepper to taste
2 tbsp. each oil and butter

In shallow dish beat eggs with milk. Dip steaks in mixture; coat with flour seasoned with salt and pepper. In large skillet over medium high heat; saute steaks in oil and butter turning once, 5 minutes for medium rare. Remove to serving platter. Discard all but 1 tablespoon fat from skillet. Sprinkle with 1 tablespoon flour; stir over medium high heat until smooth. Stir in 1 cup milk until thickened and smooth. Taste for seasoning.
