FRENCH APPLE CAKE 
1 1/2 c. oil
3 eggs
3 c. flour
2 c. sugar
1 tsp. baking soda
3 c. diced apples
1 c. chopped pecans
1 c. raisins
1/2 tsp. salt
2 tsp. vanilla

Blend well oil and sugar. Add slightly beaten eggs and vanilla. Sift together flour, soda, and salt. Mix together apples, raisins, and nuts in 1 cup of flour mixture. Add the rest of the flour to creamed mixture. Add flour coated fruit and nuts. Grease tube pan and line the bottom with brown paper. Bake at 325 degrees for 1 hour and 45 minutes or until done. Leave in pan overnight.

GLAZE:

1 tbsp. vanilla
1/2 c. buttermilk
1/2 tsp. baking soda
1 stick butter
1 c. sugar

Combine in saucepan. Bring to a boil, stirring constantly. Spoon over top of hot cake, letting glaze soak into cake.
