CHOCOLATE PEANUT BUTTER CHIP
COOKIES
 
1 c. butter
3 eggs (Egg Beaters work okay)
2 tbsp. vegetable oil
1 1/2 c. Bisquick baking mix
2 tsp. baking soda
1 (12 oz.) pkg. Reese's peanut butter chips
2 1/4 c. sugar
3 tsp. vanilla extract
1 1/2 c. flour
1 c. cocoa
1 tsp. salt (optional)

Preheat oven to 350 degrees. Yield: 100 (3") cookies.

Cream butter and sugar together. Add eggs and mix well. Blend in vanilla and oil. Mix dry ingredients (cocoa, flour, soda and salt) in a separate bowl, then add all at once to wet ingredients and stir well with a spoon. (If you melt the butter before you start, this part goes easier!) Stir in peanut butter chips. Drop onto ungreased cookie sheet, keeping about 2" between cookies, using a large teaspoon. (Can be molded into 1" balls if you want perfectly round cookies.) Bake 8 to 10 minutes. Important: Allow to cool on cookie sheet for 5 minutes before removing.
