SALAD ON A SHOESTRING 
1 can (6 1/2 oz.) tuna
1 c. shredded carrot
1 c. diced celery
1 c. canned peas
1/4 c. minced onion
1 c. salad dressing
2 hard-cooked eggs, chopped or sliced)
1 can (4 oz.) shoe string potatoes

Separate tuna into chunks and add carrot, celery, peas, onion, salad dressing and eggs. Toss until well coated with dressing. Just before serving, fold in shoestring potatoes. Garnish with hard-cooked eggs or olives, green peppers or radishes. Makes 8 servings.
