CHICKEN WITH HEARTS OF PALM 
Boneless breast of chicken, with skin & cartilage removed
Hearts of palm
Lemon butter
Parsley
Basil

Flatten chicken pieces, make them serving size. Roll hearts of palm inside. Saute in lemon butter. Bake in 375 degree oven for 15 minutes. Sprinkle with basil.

LEMON BUTTER:

4 tbsp. butter
1 tbsp. lemon juice
Enough parsley to make the butter green

Cream together.
