SUNDAY CHICKEN 
1 sm. stalk celery, sliced 1/2 inch thick
4 chicken breast halves, skinned & boned
Salt & pepper to taste
1 pkg. (1 1/3 c.) instant potatoes
2 c. milk (3 c. of milk if you use fresh potatoes)
4 tbsp. Parmesan cheese

Use non-sticking cooking oil to cast iron pan. Add chicken breast (meaty side up). Sprinkle with Parmesan cheese. Bake until brown. Make enough potatoes for 4 (directions on box of potatoes). Pour potato mixture over chicken and sprinkle with Parmesan cheese. Bake 20 to 30 minutes or until nicely browned.
