CRANBERRY-WALDORF SALAD 
2 envelopes unflavored gelatin
1/2 c. cold water
2 c. boiling water
1 can (6 oz.) frozen concentrated cranberry or cranberry-juice cocktail, thawed and diluted
1 c. apples, chopped
1/2 c. walnuts, chopped
1/2 c. celery, chopped
1 pkg. (8 oz.) cream cheese

Cut cream cheese into 1/2 inch cubes. Soften gelatin in 1/2 cup cold water. Pour 2 cup boiling water over softened gelatin. Stir until dissolved. Stir in cranberry juice cocktail concentrate.

Refrigerate, stirring often until mixture mounds slightly when dropped from a spoon. Fold in remaining ingredients. Turn into 6-cup mold. Refrigerate until set.
