BRAN MUFFINS 
1 c. boiling water
1 c. 100% Bran
1/2 c. butter
1 1/4 c. sugar
2 eggs, beaten
1/4 c. honey
2 c. milk or buttermilk
2 c. bran buds or flakes (unprocessed Millers Bran Flakes)
3 c. flour
1 tsp. salt
2 1/2 tsp. baking soda
Raisins (optional)

Pour water over bran. Soften butter, add to bran. Add egg, honey, milk and brand buds or flakes. Mix flour, salt and soda together and stir into batter. Add raisins. Bake 20 minutes (large muffins) or 12 to 15 minutes (small muffins) at 400 degrees. Spoon into muffin tins. Batter can be stored in airtight container in the refrigerator as long as a month.
