LEMON DOODLES 
2 1/2 c. all-purpose flour
1 1/2 c. sugar
3/4 c. flaked coconut
1 c. softened butter
2 eggs
1 1/2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1 tbsp. lemon juice
1/2 tsp. grated lemon peel

Heat oven to 400 degrees. In large mixer bowl combine all ingredients. Beat well at low speed until well mixed.

Drop by rounded teaspoonfuls 2 inches apart on ungreased cookie sheets. Bake for 7-10 minutes or until edges are lightly browned. Remove immediately. Yield 4 dozen.
