STRETCHER OYSTER STEW | |
2 c. finely diced potatoes 1 c. water 1 tsp. salt 1 pt. oysters, drained and cut coarsely or chopped 1 pt. oyster liquor (add milk to make 1 pint) 1/2 c. butter 1 c. cream or top milk 1/8 tsp. pepper 1/4 tsp. paprika Cook potatoes in water with salt added until almost soft, about 10 minutes. Add oysters and liquor and bring just to a boil. Remove from heat at once. Add butter, cream and seasoning. Cover and let stand about 15 minutes before serving. Makes 5 to 6 servings. |
